SAUSAGE CHEESE PLATE. We make them all the time. It is pretty easy if you want to tackle it yourself.
You will need:
Your choice of cheese...Cheddar, pepper or Colby. Block it up.
     HIllshire Farms Beef Kielbasa

Cook Hillshire Farms Beef Kielbasa on the grill or in the oven on medium heat for 15 minutes. Take out when is cools a bit. Cut it in 1" slices.
Sprinkle Smackers all over. You can also add pickles & Peppers but wait until you are ready to serve or it will spread juices and make the cheese soggy. Also do not put cover the dish of warm Kielbasa if you have cheese on the tray. It will melt down the cheese and take away from the texture.  Follow this recipe to enjoy!

STEAKS -
Inside.
Always preheat the oven. It is a good idea to marinate a steak even if it is just some Worcestershire & melted butter. The oven tends to dry leaner cuts of meat. If you are cooking in the oven, it is good to go for a ribeye or bacon wrapped filet. If it is a leaner cut, you can splash the meat with a little water. An average Steak is anywhere between 8-16 oz.  Cook at 375 for 15-18 minutes. 21-24 for Medium and no longer than 30 minutes for well. You loose so much taste after medium we would really rather you did not do that to our steaks please.

On a grill, Use the same temperature settings. If you are unsure of the temp, It is best to cook on medium gas or white coals with Charcoal.

Never leave the grill for more than about 5 minutes. It could flame up. Unless it is flaming up, refrain from opening the lid too much. This makes the temp go up and down and can toughen the meat.

             #1 Always remember the steak is still cooking even after                                leaving the grill or oven so allow for it.

              #2 Sprinkle your favorite seasoning place a butter pat on                          the plate right before placing the steak on top.
        It makes a great gravy and helps if you over cooked it a little

1. Wait till coals are hot and white
2. Never ever put meat directly over fire!
3. Keep a pan of water over fire for moisture
4. Do all your seasoning before you cook it
5. Take your time. Don't rush it.
6. Double check your backup supply of coals or gas
7. Do not over season, enjoy the taste of cooking out
8. Different meats take different temps & times
9. Wrap meat tight with foil for last hour of cooking
10. Always cook extra in case some burns or falls in
Pork Shoulders-  cook for 8-10hours at 325  depending on size & grill
Boston Butts -     cook for 6 hours  at 275
Spare Ribs -         cook at 295 for  for 6-8 hours
Baby Back Ribs-   cook at 275 for 3.5- 4 hours
Beef Ribs -            cook at 300 for 4- 6 hours
Chicken-       smoke at 300 for 4 hours or grill for 2 hours
Whole Ribeye. Cook on high off heat side for 20 mins then 275 for 3 hours


I took a 6 lb brisket and let it marinate overnight in Pepsi. The next morning rub it down with paprika, garlic salt, and onion powder.
You can always use(Cates #5 Rub or Smackers) whatever you are hungry for)

I heated  Smoker to 220 degrees and put Hickory and mesquite wood on the fire for really just the first 4 hours. After 4 hours I wrap in foil and allow cooking for another
4 hours. You can cook for up to 12 hours and it only gets better.  

Allow to rest for 15-20 minutes then thin slice against the grain. Serve with rolls and horseradish or bbq sauce.  Tender & Juicy every time.
